Grain Salad with Grilled Summer Vegetables



  1. Preheat the oven to 375
  2. In a small bowl, whisk together the vinegar, mustard and garlic, slowly add the olive oil and whisk until combined. Season with salt and pepper.
  3. Pour ½ the marinade over the chopped vegetables and let sit at room temperature for 15 minutes.
  4. Prepare the grain according to package if you have not done so in advance.
  5. Roast the vegetables in the oven for 25-30 minutes, tossing every 10 minutes.
  6. Remove the vegetables and let cool for 10 minutes.
  7. Place prepared grain into a large serving bowl, add the grilled vegetables and basil and toss with the remaining vinaigrette. Serve at room temperature.
