Kohlrabi is a cruciferous vegetable, also known as a German turnip, that belongs to the brassica family: the same family as broccoli, cabbage, brussel sprouts, cauliflower and kale. It can be eaten raw or cooked. Kohlrabi is a delicious vegetable with a taste similar to a sweeter milder version of a turnip. Trim and peel kohlrabi. Cut off the two ends and then cut in half from top to bottom. Thinly slice, rotate and slice again, making 1/4 inch matchsticks or shred with a shredder or in a food processor.
Trim and peel carrots. Shred or thinly slice into matchsticks
Place in large bowl with chopped cilantro, scallions, lime zest and orange zest.
Whisk dressing together in a small bowl. Toss with salad. Refrigerate until serving. Garnish with zest and cilantro.
