Kohlrabi Slaw with Cilantro and Lime

Kohlrabi is a cruciferous vegetable, also known as a German turnip, that belongs to the brassica family: the same family as broccoli, cabbage, brussel sprouts, cauliflower and kale.  It can be eaten raw or cooked.  Kohlrabi is a delicious vegetable with a taste similar to a sweeter milder version of a turnip.  Kohlrabi has numerous health benefits- it is a rich source of Vitamin A, beta-carotene and fiber.  Kohlrabi also contains about 140% Vitamin C to help boost your immune system!  Start by trying this refreshing and delicious slaw! This is also a great way to practice your knife skills.





Trim and peel kohlrabi. Cut off the two ends and then cut in half from top to bottom. Thinly slice, rotate and slice again, making 1/4 inch matchsticks or shred with a shredder or in a food processor.

Trim and peel carrots.  Shred or thinly slice into matchsticks

Place in large bowl with chopped cilantro, scallions, lime zest and orange zest.

Whisk dressing together in a small bowl. Toss with salad. Refrigerate until serving. Garnish with zest and cilantro.
